Seen on Pinterest: Six Simple Yet Seriously Filling Salads for a Healthy Meal

It’s January, and if you’re anything like us, you’re trying to eat healthier this month to atone for some holiday overindulgence. But salad doesn’t have to be boring — or caloric (we’re looking at you, Caesar) — thanks to these enticing recipes that combine healthy yet filling ingredients.

To make it easier to stick to your healthy ways, try to prepare your salad components by making dressing, chopping veggies, roasting meats and cooking grains on Sunday evenings so that your weeknights and midday meals are easily assembled in the morning or from your office fridge.

Here are six of our favorites:

Maple Roasted Butternut Squash Freekeh Salad with Kale

When roasted, the butternut squash in this salad tastes more like candy than a health food. To save time, look for pre-chopped squash in the produce aisle at your local grocery. Freekeh is easy to find at a health food store, but you could sub any wholesome grain instead.

Chopped Thai Salad with Sesame Garlic Dressing

One complaint we have about salad is that the flavors are often repetitive. We love a balsamic vinaigrette, but not every night, you know? These bright thai flavors are a fun change.
